they have a mind disorder or they think we are tasty or there bonkers with hunger or there trapped on a lonely island with a very tasty looking person or there just COMPLETLY CRAZY
Sometimes it's because of sheer survival pressure. People caught somewhere without anything to eat will sometimes eat other people when it's that or die of hunger.

Sometimes it's because of tradition, ritual and myth. Usually along the lines of "if you eat your (beaten) enemy, his strength becomes yours."

And sometimes it's just plain crazy.
Deep desire for human flesh in the nut jobs, might be it. But it is usually triggered by starvation in the other situations. People have had to eat the flesh of those who died after a disaster in some cases when that was the only method of survival, e.g., plane crashes in remote places. In some primitive tribes, it was a part of war to eat those who were conquered. Sometimes this was motivated as a final insult or action of revenge, sometimes to consume their enemy's power, sometimes because of tradition and rituals that went back before written history.
