Hold the "alt" key then type in the numbers given for each symbol:
Ä = 142
ä = 132
Ö = 153
ö = 148
Ü = 154
ü = 129
ß = 225
(this is on a Windows run computer, it might be different for Apple run computers)
Most of them are down in the lower right corner. The comma, period, slash and question mark are there, with the colon, semicolon and quotes; the exclamation point is at the upper left, generally shift-1. Other special characters are across the shifted numbers.

There are various keyboard shortcuts that you can use. The keyboard shortcuts are used to save the time. Control and enter can be used to send the message.

Google has not provided such an option yet. Turning off keyboard shortcuts is not a feature yet.
