The spelling of your name doesn't change just because it's surrounded by words in a different language. German uses the Latin alphabet, just like we do, so Sue is spelled "Sue."

If you want to spell it so that a German speaker who has never seen the name before will know how to pronounce it, then leave off the e. (To a German, "ue" means "actually a u with two dots over it, but my keyboard doesn't know how to do that", and the sound that letter makes isn't readily describable to an English speaker.)
