First and foremost, elephants eat plants.

If one was unable to observe the obvious fact of elephants eating plants, one could tell that they were herbivores because of the shape of their teeth. Most (although not all) herbivorous animals have teeth which are adapted for cutting and tearing off plant material to eat.

Not only that, the elephant's trunk is flexible enough to reach up into trees to grasp and curl around leaves, fruit, or other plant parts in order to eat them.

Elephants also do not have other adaptations necessary to be anything but herbivores. Unlike carnivores, they cannot stalk, nor jump, nor run at speeds fast enough to catch prey. Also, to support their immense sizes, they are grazing animals which must eat constantly. Meat is a harder commodity to find than grass and leaves in the elephant's habitat.
