Everest, the tallest mountain in the world, has got two heights: one, recognised by Nepal, is the snow height and is 8848 metres; the other is the rock height, as recognised by China, and is 8844 metres. No mountain, anywhere in the world, has a constant height: they all change over time.
I believe that the reason they are covered with snow is because of how high the elevation they have.
We don't know for sure, however scientists have found gorilla-like footprints which are larger than usual in the snow, in the Himalayas.
