With weather, health, and terrain aside, a single coyote would never stand a chance to bring down a camel, or even a pack. Camels stand too high for coyotes to reach any spots where they could do any major damage. Also, camels are capable of kicking with their legs, so attacking just the legs would also make it difficult for a coyote.
