A lab can not change color like from yellow to chocolate. However an older lab could change from yellow to white or the color of his fur gets lighter just like as people get old their hair starts to turn gray. This is because everyone's hair is naturally gray, pigments just color it. When pigments stop working or run out your (or your dog's) hair gets lighter in color. But only peoples turns gray.
