Wild tapir is a healthy and nourishing alternative to farmed pork, and is gaining in popularity in many Western countries due to its (relatively) low saturated fat and cholesterol levels. As a general rule, however, the tapir should be cut up BEFORE you cook it, otherwise you will need some very large cooking utensils! You can roast them whole over a wood fire, though, as my grandmother used to do on special occasions when I was a child.
