If you mean do they dive under water to search for food, the answer is no. However, they will wade in shallow water and use their nimble fingers to search for food under water - crayfish, crabs, clams, snails, etc.

Do hermit crabs like being sprayed by water?

It all depends on the crab, each one has it's own personality. But most hermit crabs love being sprayed by water- as in the wild hermit crabs will literally 'come out to play' in the rain. The feeling of being sprayed by water is very reminiscent of that and a fun activity for most crabs.
