A cat's ear uses more muscles to move the external part of the ear in most direction's, whereas humans can only move them ever so slightly backwards. A cat's ear is on top of it's head, so it can move and not only pick up the various sounds in the environment, but when directed, the cat's ear can more easily hone in on any one particularly interesting sound and hear it more clearly than the others. Humans, for example, have their ears plastered to the sides of the head and they can not move dramaticaly, so we are at the mercie of the bouncing vibrations and have to turn our head to hear better; and one ear will always be in the opposite direction. Cats can just move their ears to face the sound, whether both for the front and the back or turning each individual ear to the side to pinpoint the sound. Their ears are also cupped, so undesirable sound is blocked more and the desirable sound is scooped right in, making the sound quality better. It would have the same effect if we were to put our hands up to our ears.
