Not very well, unfortunately, which is why they are almost extinct. They generally try to run (or swim) away when threatened, and offer little resistance to predators once caught. They might wriggle around a bit, and have been known to kick an attacking tiger in the stomach, but this is likely to be more accident than an attempt at aggression. During the course of my research I was told by a Malaysian jungle guide of one mortally injured tapir who deliberately bit the ear of a hunter as he bent down to look at it, but I have no way of knowing if the story is true or not.
