I'm not a vet, but I'm pretty sure a little bit of artichoke is okay for a dog. I've never seen it on the list of "bad dog foods," and I have scraped out the soft part of steamed artichoke for my own dog. I would avoid giving a dog a whole artichoke, of course, seeing as it does have many "choking" fibrous bits. My dog likes the soft bits, and I'm glad to give her something green.
Artichokes are not deadly to dogs, but they are not recommended as they can be difficult for dogs to digest and may cause gastrointestinal upset. It's best to avoid feeding artichokes to dogs and stick to dog-friendly fruits and vegetables.
There are a few animals that will eat artichokes. A few of the animals are birds, and some rodents.

Deer definitely eat very young artichokes, when the leaves are tender and high in nitrogen.
