You have to get all of the needed minerals and vitamins per day. No, it is NOT healthy to eat once a day. It slows down your metabalism and believe it or not it causes you to gain weight. I have struggled with this for years. I do not suggest eating once a day to anyone especially if pregnant or if you have any health problems. You are supposed to eat several small meals a day through out the day.
