Is it possible for a gerbil to die from not eating for the past two days?

In some cases a Gerbil who's is food deprived could potentially began to eat its own hands, tail feet or other cage mates such as younger/weaker gerbils. Sometimes even there own feces. Depending on how your gerbil eats, whether frequent or a little, can determine there reaction. For example some gerbils will just began to drink in the place of food.

No. But if they are not eating they may not be drinking either. This is very bad, as they may become dehydrated and more ill. You need to worry more about him/her not drinking than you do of them not eating. I would suggest, that if they look tired and sad, then they are probably ill. There are tons of sites with Gerbil ailments on, I would suggest checking those out. Give them their favourite food/treats to make sure they eat, it doesn't matter if they are only eating peanuts, just as long as they are eating.
