Horse feces are mostly just fermented hay/grass...so, assuming that the horse wasn't recently wormed or given medication that is toxic to humans (and is expelled intact through fecal material...which is unlikely) consuming poo would not be deadly. I doubt it would be particularly heathly to eat it.
