The best way I know to answer this question is by going by the now extinct animals found in the La Brea Tar Pits. Therefore, this list may be considered incomplete.

The American Mastadon

The Saber-toothed Cats

Yesterday's Camel

The Dire Wolf

The Giant Ground Sloth

The Western Horse

Some of these animals are not truly extinct, as some animals such as the camel and the horse migrated to other continents and were subsequently re-introduced into the U.S. within recent history.

There are/were also much smaller animals and birds that are not truly extinct in the world, but no longer exist in California, like the skunk, ground squirrels, coyote, etc.
