The forelock, since it is just as pronounced in this breed of cattle (WAY more than any other breed, even Galloways), as it is in horses.
The young of a cow is a calf, regardless of the breed but if you wanted to be more specific you could call it a Highland calf or you could be more precise and say it is a Highland heifer calf or Highland bull calf.

A newborn Highland calf weighs between 50 and 75 pounds. A full-grown Highland cow can weigh anywhere from 900 to 1,200 pounds.

The mature weight for a Highlander cow is around 1000 lbs. Bulls top out at only around 1700 lbs.

Scotland doesn't have a cow, if you are referring to a "national cow" or similar. However, such breeds that have originated from Scotland include the Scottish Highland, Aberdeen Angus, Belted Galloway, Galloway, and Ayrshire.
