it's called an exoskeleton. it protects the spider from harm. as a spider grows, its exoskeleton will become to small for it, and it'll shed the exoskeleton. this process is called molting. you know when a spider (especially a tarantula, where it's very pronounced) is about to molt because the abdomen will start to glaze over. if it's a hairy spider, it'll look like it's balding on its abdomen.

Of course any spider with eight legs has seven. There is no spider that naturally has only seven. A spider can lose a leg from injury. As the spider molts it gradually grows back the lost leg.
