What dog breed is a good protector?

Go to your local shelter, pick a shepherd or shepherd mix. They are smart and can easily be trained for protection. Training does not mean making the dog mean, just protective. You can go on line for training tips or take the dog to a trainer. I suggest a female because they tend to be better at this task.

Depends, if you live in a small suburban area that doesn't allow large breeds, then the Dachshund is a very good breed, although not very tough. If you live where there is no breed limitations then the Dalmatian is a good one, but only for ONE person. Otherwise the other best breeds are the St. Bernard, New Newfoundland, (because of it's terrifying size) Rottweilers aren't the best breed because of the many health and hip problems they can get. I preferably think the German Shepard, Alaskan Malamute, Husky, Sharpei, Shiba Inu, or Boxer are pretty good guard dogs. Just make sure you train it right, meaning no physical punishment AT ALL. If physical abuse is present the dog has a VERY HIGH chance to turn on the owners, and possibly kill them in an act of dominance. Learn to correctly train your dog to guard or don't even think of trying.

Dogs are used for protection in many ways. First of all, there is the intimidation factor. If you are out walking your dog, a robber is less likely to mug you for fear of the dog attacking him to protect his owners. There are other dogs who are trained to attack people on command, such as police dogs. Even though some dogs are more protective than others, there really isn't a dog breed that is the most protective. Rather, it's what kind of protection that you want. Different dogs excel a different things, but I wouldn't recommend that small dogs guard you. They're too small to scare a criminal away. Also, make sure that the dog isn't too friendly. If a dog is too frendly, it might think that the criminal was a friend and wouldn't be an effective guard.

I'm assuming that you're talking about a guard. If that's not right, and you are living with elderly and you want them to not leave the house, then you should probably get a cat instead to entertain them so that they don't want to leave the house.
