A "cow horse" is a horse that has been bred and trained to work a herd of cattle. These horses tend to be short and stocky, with strong hindquarters, a deep barrel chest and a wide head with large open eyes. Some of the more popular breeds are American Quarter Horse (there are also "Appendix Quarter Horses" that have a lot of Thoroughbred in them and are much taller and less well-muscled; these are used for racing and dressage, mostly), Appaloosa and Paint (a colored-breed offshoot from Quarter Horses, now a separate breed in its own right). These horses are selected based on their intelligence, agility, sprinting speed and "cow savvy" - the ability to read a cow's direction of motion and behavior and reaction appropriately. A cow-savvy, well trained cow horse can almost cut a cow out of a large herd by itself once the specific cow has been selected for it.
