Suero (which is like sour cream) is widely used throughout Columbia. Tolimenses are tamales made from corn, potatoes, peas, carrots, rice, chicken, and pork. They are considered a delicacy. Sancocho is another type of soup that was developed along the northern coast, but widely eaten throughout the country. It contains corn, potato, yuca, and plantain, as well as regional spices.
