They do that to move around. If they couldn't hop, they wouldn't be able to move at all! You better be glad bunnies can hop!

Bunnies typically open their eyes around 10 days. Some bunnies open their eyes even earlier if they feel that they really need to see where they are or what's going on. All my bunnies (so far) have opened their eyes on the afternoon of the 11th day. I sometimes "help" the process by taking off the crustiness that forms to help seal the bunnies eyes.
Bunnies have evolved to hop as a way to move quickly and efficiently. Their long hind legs and strong muscles allow them to leap and change direction rapidly to escape predators or reach food sources. Hopping also helps bunnies conserve energy by covering more ground with each bound.
At 4 to 6 weeks they should start to eat solid food and drink water.
