Yes, typically a horse will know when to stop eating. However horses are designed to take in small amounts of food for up to 18 hours every day depending on the quality of what they are eating, the better the quality the less time they spend eating. However most horses are kept on a twice or three times daily feed schedule and this leaves them with little else to do but wait, which can and does lead to the horse overeating in an attempt to 'make up for lost time'.
I was a horse owner for many years and i would strongly suggest you spend lots of quality time together getting to know each other. I recommend that you don't let anyone ride, feed or handle your horse other than yourself. Lots of people suggest you give 'lots of treats' to bond, but I strongly disagree. If you feed your horse to much treats, it will tend to always expect them and start to nip or bite at you if he/she does not receive any.

Well honestly it depends on the kind of animal you have. You could have a horse and you probably would spend a lot more time with your horse than your dog because your horse takes a lot more food, grooming, and not to mention it needs to be in good shape. That is why it depends on the animal.
