The ears aren't truly pink, they generally are just a lighter shade of the same colour as the rest of the rabbit's skin. However, the flesh on a rabbit's ears is very thin and they are more lightly furred. So when light passes through the capillaries carrying blood through the ears, it can give the appearance of a pink tinge. This is especially so on lighter colored animals such as white rabbits.
Rabbits have pink skin inside their ears because it lacks melanin, the pigment that gives skin its color. The blood vessels close to the surface of the skin give the ears their pinkish hue. This pink color helps regulate their body temperature by increasing blood flow and heat exchange.

There are many rabbits with ears sticking up. My Netherland dwarf rabbit, which is the smallest rabbit, has upright ears. Also dutch rabbits and rex rabbits do, to name some. Hope this is of some help :)
