For most bears, they have to hibernate during winter. So, they store up a lot of fat in them, and survive off of their fat reserves as they sleep through the winter. If they were not to store up fat reservesm, and only eat enuogh to pass on one day's worth [or whatever] on, they'd have nothing in the fat reserves to survive the winters off on.
