Why is buffalo wing called buffalo wing if its chicken?

It is said that the city of Buffalo, New York, is named after the creek that flows through it -- Buffalo Creek. The origin of the Creek's name is unknown, although there are several hypotheses. The American Bison (Buffalo) was native to this part of North America in the 1700's, but there seems to be no evidence the animal was particularly abundant in the immediate vicinity of the creek. According to one hypothesis, Hennepin, a French explorer, described the stream as "beau fleuve" -- 'beautiful river', and "buffalo" is supposed to be a later mispronunciation of this name. But there is simply no evidence for this claim, and it is highly implausible insofar as no French person would ever describe a creek as a "fleuve". The latter word is used only to describe great rivers that flow into the sea. In French this stream would be called a "rivière".

Tradition, mostly. When people in America discovered bison, they called them buffalo because of their very close resemblance to African, European, and Asian buffalo. Bison are, in fact, very closely related to buffalo, though are slightly different. Both buffalo and bison are bovines. There are no wild buffalo in the Western Hemisphere.

Actually, they are very different. Just look at a picture of a Cape buffalo and an American Bison, you'll see the difference.
