When a person dies, cyanosis appears. This is where the blood in the body flows to the lowest point. The blood under the skin gives it that rosy look. When the blood is drained from the body and embalming fluid is injected into the body to preserve it and replace fluid loss, the skin has a grey look to it, similar to a light bruise. It's to cover this and to give it that rosy look again.
