When a mare starts to eat dirt, that means there is an imbalance in her diet. Some minerals or vitamins are missing. Dirt eating is a symptom.

Keep in mind, evidently there are some horses that simply do this as a character trait. But I'd get the vet to check her out pretty quickly.
