The Siksika traditionally made their clothes out of animal hides, particularly bison hides. They would tan and process the hides to make clothing such as shirts, leggings, and dresses. This practice allowed them to use all parts of the bison for various purposes.

Besides European settlers killing the American bison (Bison bison) for hides and meat, the slaughter of the bison herds was a means to deprive the native American tribes from their traditional sources of food and hides, etc. The slaughter greatly increased as the railroads headed west, with bison being shot from the train carriages as the train sped past, and the carcases left to rot. Driven into starvation, many tribes were forced onto reservations. Thankfully, nowadays, due to conservation, the number of bison has steadily increased and the numbers are stable.

North American Bison are a protected in the wild as well commercially bred for meat and hides. In both instances they are heavily managed by the US Forest Service or by their private owners.
The fact is that the immense bison herds of the Great Plains were almost completely decimated by the late 1800s because of indiscriminate hide hunters, who used rifles to kill thousands and thousands of bison for nothing more than their hides.
Bison were not hunted to extinction. They were hunted almost to extinction by use of repeating rifles, revolvers, pistols, and a lot of willing participants who weren't squeamish nor hesitant about shooting an animal were it stood. Bison could be shot from the passenger cars of a train, from horse-back and from a hide-out in a coulee. Many of those who shot bison were veterans from the Civil War out to make a quick buck on the number of bison they took down so that the hides could be collected and sold for a profit.
The Ancestral Puebloans (Anasazi) wore clothing made from cotton and animal hides. They made garments such as tunics, loincloths, and robes. Additionally, they used sandals and moccasins made from plant fibers or animal skins.
There are two species of Bison in the genus Bison. The American Bison is Bison bison and the European Bison is Bison bonasus.
Anecdotally, the tongues of bison were the meat often salvaged from the dead animals. Other parts of the meat were not as tender, and the heavy hides were more prized by the Native American tribes (for clothing or for making tepees) than by settlers. There was also a market in shipping the dried bones east to make fertilizer. Buffalo Bill Cody was famous for shooting buffalo to feed the railroad crews. The meat and skin were about all that the settlers would use, and even then they left a lot to waste.
