It depends on a few things:
1. You introduce them correctly (no pushing, no making the other jealous, etc.)
2. The temperament and past life experiences of each dog.
3. The age and gender of each dog. Same sex pairings are more likely to result in quarrelling than having one of each sex. Remember to spay and neuter to prevent unwanted pregnancies.
4. They are stopped from becoming over dominant over the other.
The German Shepherd would win almost every time it would very easily outmaneuver the English mastiff and get a bite on the back of its neck which it would hold until the English Mastiff was killed or until the fight was hopefully broken up.
In general I would say a mastiff.
i would recomend a rhodesian ridgeback, German shepherd, a doberman or mastiff.
The English Shepherd is a medium size dog ranging from 40 to 60 pounds for females and about 40 to 70 pounds for males. I believe the German Shepherd is also classified a medium size dog so you would have to take an educated guess from here.

Mastiffs are much heavier, larger and more powerful than a doberman is. Mastiffs were originally bred to be fighting dogs, though in today's world, the domestic Mastiff is more gentle and laid back. The same with the doberman. Dobermans, because they are smaller and lighter than a mastiff, are quicker on their feet, and probably can do more damage than a mastiff is capable of doing. But the jaws of a mastiff are very powerful, and once in those huge jaws a doberman wouldn't have a chance.
German shepherd would be a better pet

A German Shepherd is a naturally a guarding dog with excellent skills. They will restrain your intruder and won't actually maul the intruder and normally not inflict deadly harm to an intruder. Whereas a Bull Mastiff would probably actually aim to kill someone if provoked. You obviously don't want a lawsuit on your case.
A bull-mastiff would definitely win the fight. Its stronger jaws has larger teeth and it is a lot larger than a german shepherd. The bullmastiff also has good enough strength to take down a dog larger than its size.
