I have waited tables for 5 years, all fine dining. Tips vary day to day, in a fine dining restaurant with a nice wine menu, a server should be able to pull $100 easy. Highs ranging from $350-500 dollar nights depending on clientele. That being said, on an off day you might be sent home early with nothing, or work all night on a slow evening and make 50 bucks. Primarily tips have to do with the server, if you have IT you'll do fine, if you don't have IT, I'd look for a new job.
Typical, and for most restaurants by the way, is around minimum wage. Added to this are table tips which can supplement the hourly rate. Some restaurants pool all table tips into one pot and equally disburse the money at the end of the the day.

"your only pay is how much tip you earn, so it varies depending on how well you serve your customers."^However true this is not the entire truth; servers/waiters do get paid a very small salary depending on where you reside. For instance in Texas the wages are around $2.13-$2.15 an hour +tips and in NY the wages start at around $4.15 ish +tips. You must claim tips every day you work and the tips that you claim + your salary must be equal to or greater than the specific states minimum wage; If it is not than the restaurant you work for must pay you the difference .
On average, a server at BJ's Restaurant & Brewery can make around $50 to $100 in tips per shift, depending on the location, time of day, and level of service provided.
In most restaurants that is the norm. Usually around 10% of tips or 5 to 7% of alcohol sales go to the bartender. Here is an iphone app that does the math for you plus it keeps track of your daily tip income for you. It helps to see how much you are making each day, and how much you are paying out; it's called TipOut... http://tinyurl.com/cw36x6
