Going into a Japanese restaurant for the first time can be very intimidating, especially if you have no idea what you are supposed to do when you get to the Sushi bar. The etiquette can seem overwhelming, but if you know what you are doing before you go, then you won’t feel so intimidated.
-Step 1: Sushi bar
At the restaurant, try and eat at the sushi bar. This is polite and will offer you a full Japanese experience.
-Step 2: Chat
Chat to your neighbors. This is what a Sushi bar is all about. You are supposed to have a conversation with people, even if you don’t know them. Try to strike up some interesting conversation. You might even ask for advice on the Sushi if they are experienced Japanese restaurant goers.
-Step 3: Chef
Say hello to the chef, ask for his recommendations, and tell him you are a beginner but want to learn, and he will be friendly and try to help.
-Step 4: Ordering
Order Sushi from the chef, not the servers. In traditional restaurants at least, this is how it works; order everything else from your server. Order 1 or 2 pieces of Sushi at once, this is how it is done, you do not need to order all at the same time.
-Step 5: Let the chef decide
Often the best and politest way of ordering is to allow the chef to decide. If you are a regular, he will know what you like. If you are new, he will allow you to try new things. Ask him to prepare what he thinks is best – you won’t be disappointed.
-Step 6: Traditional drinks
Don’t order a soft drink. You will look like a beginner and it will spoil the flavor. Order sake, green tea, or even beer. There are many different types of Sake, some hot, some cold and some very exotic.
-Step 7: Thanks
If you enjoyed your meal, at some point during the evening (not lunch) offer to buy drinks for your chef and servers. They will probably order a beer, but you will be remembered for your kindness and treated accordingly.
-Step 8: Tips
If you are in Japan – DON’T TIP. If you are elsewhere, then tip the chef and servers separately, this is polite and shows you enjoyed your meal.
This may sound like a lot to remember, but you will soon get the hang of it, don’t be afraid to ask for help if you don’t’ know what you are doing, everyone was a beginner once and soon you will know all the dishes, the chef and all the types of Sake!
