There are no special statements made by Jesus about animals - all including birds, fish, mammals and reptiles. In the Genesis account, animals are created and are said to be good. Adam was given the privilege of naming each and every one of them. Eventually, 'clean' animals would become food for mankind.

Jesus did speak of birds here:

Matthew 6:26

New International Version (NIV)

26 Look at the birds of the air; they do not sow or reap or store away in barns, and yet your heavenly Father feeds them. Are you not much more valuable than they?

He also showed His authority over demons by granting their wish to be sent into a herd of swine (pigs) here:

Mark 5:9-13

New International Version (NIV)

9 Then Jesus asked him, "What is your name?"

"My name is Legion," he replied, "for we are many." 10 And he begged Jesus again and again not to send them out of the area.

11 A large herd of pigs was feeding on the nearby hillside. 12 The demons begged Jesus, "Send us among the pigs; allow us to go into them." 13 He gave them permission, and the impure spirits came out and went into the pigs. The herd, about two thousand in number, rushed down the steep bank into the lake and were drowned.

And one other example though there are more here with a fish:

Matthew 17:27

New International Version (NIV)

27 "But so that we may not cause offense, go to the lake and throw out your line. Take the first fish you catch; open its mouth and you will find a four-drachma coin. Take it and give it to them for my tax and yours."

Though an animal lover myself, there is no 'special' statement(s) from Jesus about animals in the New Testament. It was mankind who He was sent to save.
