The standard terms are "minting" or "striking".

Sometimes you'll hear people talk about "stamping" or "printing" coins but that's really not correct. By convention, "stamping" a metal object usually refers to something other than a coin; e.g. a spoon or car fender, even though the production processes are related. And "printing" is incorrect, because coins clearly aren't made using paper and ink!
