The Cold War was not about "gaining power". It was about maintaining the power the USSR and the US already had and to keep the communists from spreading any more of the communism.

Why did soviet union and the US find it essential to fight each other at the expense of another country?

At the time it was generally believed that either the US would destroy the USSR, or the USSR would destroy the US, but the two super powers could not peacefully coexist indefinitely. Of course, as we now know, the USSR fell apart by itself, in 1989, and the US never did have to destroy it. So the Cold War was largely unnecessary. But at the time, that is not how it appeared. It seemed to be an unavoidable struggle for global domination, in which your only choice was victory or death.
