The total number of casualties is somewhere between 1.5 and 3 million (no one kept an exact tally). Knights were probably better protected against travel hazards, being on horse and better than average armed, but the diseases would get them just as they did the common soldiers and camp followers.
In battle they stood a decent chance of survival a) again because of their armament, b) because their Muslim adversaries quickly discovered that a living knight was worth a ransom, a dead knight worth nothing, so they tried to capture knights alive, not kill them.
