Kolbe was arrested 17 February 1941 for hiding Jews. In July of the same year, Kolbe volunteered to take the place of a condemned man and died in August 1941.
It seems obvious that the Church was so impressed with his life and the ultimate sacrifice that he made that he was elevated to the status of saint.

Here is more info: In July 1941 a man from Kolbe's barracks vanished, prompting SS-Hauptsturmführer Karl Fritzsch, the deputy camp commander, to pick 10 men from the same barracks to be starved to death in Block 13(notorious for torture), in order to deter further escape attempts(the man who had disappeared was later found drowned in the camp latrine). One of the selected men, Franciszek Gajowniczek, cried out 'My wife! My children!', lamenting his family, and Kolbe volunteered to take his place. __________________ He was imprisoned because the Germans considered him a risk, that as he had helped refugees, he would continue and potentially encourage others to do the same.

It was a polish priest. If I remember rightly, a spade went missing. The Nazi's decided that 10 random people should be put underground with no food to die. In the selection, one Jewish man was chosen. He threw himself on the floor, saying that he had a family and please don't kill him. Then, one Polish priest volunteered to die insted. The Polish priest went down and kept the spirits high. Eventually he was the only one left alive. They offered him drugs so he would die. The priest decided that he will die the same as everyone else. Eventually he died. After the camps were liberated, the priest had a proper funeral. The Jewish man who had lived insted was there. Saint Maximilian Kolbe is perhaps one of the bravest and selfless saints of our time. He was arrested following the Nazi invasion of Poland and was eventually transferred to Auschwitz and branded as prisoner 16670. Assigned to a special work group staffed by priests, he was supervised by especially vicious guards. His faithfulness brought him horrible beatings and the worst assignments. Left for dead, he was smuggled back to the camp hospital by other prisoners and spent his recovery hearing confessions. Following an escape plan, the Nazis decided to punish some prisoners by death. Francis Gajowniczek, a married man with children, was chosen to die in payment. Saint Maximilian Kolbe offered his life in exchange and he died, as he wished to, in service to the Lord.
