I created a timber batton frame using 2" x 2" timber attached to the bricks, then put insulation blocks between the battons (you could also use insulation rolls but it's more difficult to handle) & finally covered the walls in plasterboard nailed to the wooden frame, I don't think just plasterboard alone will provide much sound proofing.

When installed beneath an existing ceiling with AMW50 and 30mm of plasterboard applied, improvements in both airborne noise and impact sound would normally be well in excess of 300% this can be further enhanced if our Acoustic Membrane is sandwiched between the plasterboard layers.
