I created a timber batton frame using 2" x 2" timber attached to the bricks, then put insulation blocks between the battons (you could also use insulation rolls but it's more difficult to handle) & finally covered the walls in plasterboard nailed to the wooden frame, I don't think just plasterboard alone will provide much sound proofing.
