If you mean having two USB adapters plugged in to the computer, then yes, they can work very well. As far as I'm aware, most Bluetooth software will choose the first available bluetooth adapter. So if you're using one device to send or receive, and you tell the program to scan for devices, it will see that the first one is in use by another process and it will attempt to use the second one.
