As for Giratina you need to trade over the special Pokemon Movie 12 Arceus from Platinum and take it to the Ruins of Alph and you'll be transported to the Shinjoh Ruins which is an area outside of the Johto region. There you can choose for Arceus to create an egg containing either Dialga, Palkia, or Giratina respectively and whichever one you pick will be readily equipped with their respective orb so if you pick Giratina then it'll allow it to transform as long as its Griseous Orb is equipped, this is the only way to get the Griseous Orb in the game.
For Shaymin's Sky Forme. You need to take the special Shaymin that was awarded in wireless events around some of the world in 2008 and 2009 to a woman in the Goldenrod City Flower Shop and she'll give you a Gracidea Flower which will allow you to change Shaymin's form to its Sky Forme.
