In the book series, nobody even proposed to Sookie. In the series... I guess we'll find out next season. I sure hope she doesn't, though.
Sookie and Bill didn't break up, in fact they are technically engaged (they would have made it official but Bill was kidnapped). They haven't broken up YET permanently. If the show stays true to the books they should be over this season (3), and it will be when Sookie learns Bill was sent to Bon Temps by the Queen Sophie Ann for the distinct purpose of investigating Sookie. In the books, Bill and Sookie are permanantly broken up because Bill was unfaithful to Sookie by sleeping with Lorena his former lover, and maker.
Probably not since he told sookie he was forced to love sookie at least with Eric it was genuine love I think sookie will spend he. Life alone now or marry a fairy and since Charlene Harris confirmed that sookie wouldn't end up with a vampire concision:bill is a vampire but there is no right and wrong answer here because anything can happen on true blood

But they broke up because Bill went back to his former lover and maker, and had sex, Bill had planned to pension Sookie off and stay with Lorena, and Sookie began to hate him for that. So they broke up. Personally, I think Eric and Sookie are just PERFECT for each other. Eric is just amazing. And like I said, if they make a True Blood season for every True Blood book, and stick by the book then in the end, Sookie and Eric will be married.

The books BEGIN dedicated to Bill & Sookie, so it's only natural the series is also. By season 4 I'm sure it will be Eric & Sookie just as the books are :)
