Uhm, I've been out of Inuyasha for a while... but I'm pretty sure he becomes human every night of the new moon, when the moon is not visible in the sky. why this is, i don't know... apparently all half-demons have a time when they become human for a little while. Naraku does the same thing, but he can control his transformations...
But yeah, I'm sure there's been other times he's been human for a bit in the show/book.
