Jack died from hypothermia. Whilst Rose was laid in a block of wood from the wreckage floating on the sea, Jack was hanging on the edge of it with over half his body submerged in below freezing water. This caused him to have hypothermia, sending blood to his heart instead of round his body and eventually made his heart stop before help could reach him.
