During the rescue effort, all of Carpathia's deck crew were woken and sent to station themselves around the deck. They were looking for icebergs, which were the biggest obstacle, as well as Titanic's lifeboats. By the time Carpathia found the boats, dawn was beginning to break, so it's possible that some natural light allowed those on the deck to spot them.

It wasn't a sub that found the Titanic because the ship was in water that was too deep. Instead it was a diving submersible that was run by remote controls from a ship on the surface. They could move it around the ship, take pictures of the ship, and bring back samples.
