The canon age is unknown, as in, the play/book by Mr. Barrie never specifically confirms what age he is. It is also a very complex matter.
In the original novel Peter acts, thinks and speaks like a 5-year old would, and he is described to still have all his baby teeth in his mouth. But, he is likely older than that as he is able to have sword fights with grown-up pirates, and Wendy with whom he is said to be the same age is the oldest of the Darling childen whilst Michael is the youngest and Michael seems to be around the 5 years of age, and then there's John as the middle child. So in the original story Wendy and Peter must be physically about 7 years old. Not much older because in the end, the grown-up Wendy attempts to lift Peter in her arms which speaks of a small child and thus likely 7 years of age, tops.
There is also the fact that Mr. Barrie himself was one of the disigners for the Peter Pan statue that is now in Kengsinton Gardens, London - and Barrie originally had photos of the 6-years old Peter Llewelyn-Davis, (a family friend), for the design matters.
Still, The Walt Disney Company in most of their adaptations based on the novel, has visioned Peter and Wendy to be 10 to 12 years olds or even older. The 2003 live-action movie had them be 12, for even though it is very novel-faithful, it does borrow some aspects from Disney too. So that's really just Disney-(based) idea and not necessarely Mr. Barrie's intent. Author analysis and studies have come to conclusion that Mr. Barrie is Peter Pan, as in that he based Peter's character and story essentially on his own childhood and mother issues whcih he ultimately began to have at the age of 6 when his older brother died.
The book Peter Pan tells us that the legend of Peter Pan already existed when Wendy's mother was a little girl, so practically Peter may have been many decades or even centuries old at the time of the original story. But speaking of physical age, in general officiality Peter Pan is something between 7 to 12 years old, in rare occations even 15-years old. Mentally, in the original story he is obviously about 5-years old.
It is not specified exactly, but roughly any age between 4 and 12. In the book "Peter Pan in Kengsinto Gardens" by J.M. Barrie, he's most likely 4 or 5 at some points and perhaps grows still a bit older during it. (In that book he still spent a lot of time away from Neverland which is why he aged a lot.) In the book, "Peter Pan" (alternatively known as "Peter Pan and Wendy"), he's described to still have all of his first teeth in his mouth, but is approximately 7-years old as he is capable of fighting grown-up pirates and indians but small enough to be lifted into an adult's arms (which the adult Wendy tries to do in the end.)
But in the Disney animated adaptation he is voiced by a 15-years old teenager, and in the Sci-fi channel mini-series adaptation he is played by a 15-years old teenager...which is stupid in my opinion...As that's barely a BOY anymore...
In other adaptations which borrow elements from Disney, he appears to be around 10-12 years old.
Mentally, he appears a 5-years old, in the canon novel "Peter Pan". Also in the various adaptations he comes off immature seeing to his physical age.
And, basically he is perhaps even centuries old. Because the original novel reveals Peter Pan was a legend already when Wendy's mother was a little girl.
Jeremy Sumpter, who played Peter Pan, was 13 at the beginning of filming, and turned 14 during the time. Rachel Hurdwood, who played Wendy, was 11 at the beginning and 12 at the end.
