The movement of a donkey is called its gait. Donkeys generally walk 4 miles per hour, similar to that of a human's.
Jamie has stated that he normally walks on his toes. He has actually had to learn to walk with a more normal gait (heel to toe) for some of his acting roles.
First Watch to see if the mother accepts the foal if she does let nature take it's course! Unless the donkey seems listless and sick don't worry. From my experience on their first day they should NOT eat solid food but SHOULD jump and gait about. They may even rear.

If you are actually riding the horse, you should (obviously) know which gait you are in. If not, look at how fast the horse is going, the rider's position (forward seat?) the hoof pattern etc.
