Peter Jackson will be producing two prequels to The Lord of the Rings: The Hobbit and an "in-between" movie set between the ending of The Hobbit and LotR. There will be no sequels to the Return of the King/The Lord of the Rings trilogy.

Yes at least once. In the third movie, when Aragon/Legolas/Gimli come out of the place of the dead on their way to fight at Gondor, they meet a fleet of pirates. Legolas draws his bow and shoots one of them. The one he shoots is Peter Jackson.

He was also eating a carrot in the village of Bree, and he was a guy throwing a spear in Helms Deep in The Two Towers
