conventions is another word for methods. so pretty much what that means is like what method they are using to make the film seem western. so a convention in a western film would be the costumes, the way there clothes are dirty or rugged shows that they aren't very wealthy or have maybe just been in a fight on the ground, etc...

also the music, the way they would put soft guitar strumming in the background at a sad or calm scene, such as a sad goodbye, or maybe a romantic love scene because it helps to set the scene.
