Astronauts would not have an easy to access place to defecate or urinate. If that were to happen, they may have to hold it or defecate into bags. That problem is that the food bags look so similar that people may eat fecal matter.

If they held it, their urinary bladder could get infected. It would also deal damage to the kidneys.

If they hold their feces, it could take a while but along with symptoms headaches, pressure pains, feeling ill, abdominal aches, bloating and gas the intestines can eventually rip from the pressure.

If they defecated or urinated randomly about, their waste could go into important equipment (suits, clothing, technologies, etc.), and cause malfunctions or just be plain uncomfortable. Doubled with the fact that body waste is breeding grounds for bacteria. Illnesses would spread like wildfire.

Is a toilet considered to be a habitable space?

Of course they are, for something small enough to fit in them and will feel protected and comforted by living there. However, a toilet that is installed in a habital living space (e.g. residential bathroom) is only a fixture in that space and not part of the actual space to be inhabitated.

How do you go to the toilet if i don't have a toilet in space?

In a microgravity environment, using the toilet can be a serious problem. Current toilets use air flow to help solid & liquid wastes go where they're supposed to. This doesn't always work. Before the shuttle era, going to the bathroom in space meant tubes, and plastic bags. If the current space toilet ever malfunctions, you can bet that there are more bags on the space station to be used in case of emergency.
