Your instructor has to correct them and that takes time to check them all. She has a due date as well, getting grades out to the main office, so that they can be added to the transcripts. Your tests, quizzes and research papers have to be checked and corrected as well. Making the due date is also important as you will have very many of these over your life time. Your job can depend on that. Also your grades can be at risk. She isn't going to be very understanding if you are late and that makes her late.
